Why This Course Print E-mail

This course was originally designed at the 'Industry Professional Level' to help prepare food and beverage managers and wait staff to achieve the basic level of wine knowledge considered necessary for a wine professional. It has since been used to prepare those already in the wine industry to reach a level considered necessary for developing professionals. The 'Wine FUNdamentals Course Level' has been added as a more realistic level for the beginning wine enthusiast or server.

Wine FUNdamentals Course: Designed for individuals who want a solid, basic level of wine knowledge but don't need the detailed technical knowledge an industry professional might want. Much of today's wine service is done in family-value or up-scale, casual restaurants. These servers (and guests) may not want or need to know what a "Super Second" is, or, what the soil composition is in Champagne, France. What they do need to know includes:

  • Basic concepts and definitions
  • Tasting terms
  • How to open a bottle of wine
  • Most popular varietals and flavor profiles
  • How to read a wine label
  • Major wine regions of the world
  • Service standards
  • Wine and food pairing basics
  • Knowing your way around the wine list

  • Beer and Spirits Fundamentals

Industry Professional Level Course: This level includes everything the Wine FUNdamentals Course covers, plus more in-depth coverage of these areas:

  • Winemaking processes/procedures
  • Harvest seasons
  • Latitudes and geography

  • Anatomy and tasting evaluations
  • Detailed technical terms
  • Varietals distinctions
  • Wine laws
  • Wine regions of the world detailed
  • Sparkling, fortified, and dessert wines
